Ingredients:

  • 1 large sweet potato
  • 1/2 cup shredded BBQ brisket
  • 2 tablespoons BBQ sauce (your favorite brand)
  • 1 tablespoon chopped green onions (for garnish)
  • 1 tablespoon chopped cilantro (for garnish)
  • Salt and pepper to taste

Instructions:

  1. Preheat your smoker to 225°F (107°C).

  2. Wash the sweet potato thoroughly and pat dry. Pierce the sweet potato several times with a fork to allow steam to escape during cooking.

  3. Rub the sweet potato with olive oil and season with salt and pepper.

  4. Place the sweet potato directly on the smoker grate and smoke for 1.5 to 2 hours, or until the potato is tender when pierced with a fork.

  • Salt and pepper to taste

Instructions:
